Recipe of the Week: Eric’s Signature Turkey Meatballs

Ingredients Needed:

  • - non-stick cooking spray
  • - 1 1/2 pounds ground turkey
  • - 3/4 cup of quick cooking oats
  • - 2 cloves garlic, finely chopped
  • - 2 tablespoons fresh chopped cilantro
  • - 2 tablespoons of all natural tomato sauce
  • - 1 large organic egg, beaten
  • - 1/2 tsp. fresh cracked pepper
  • - sea salt to taste, about 1 tbsp.




  1. 1. Preheat oven to 400 degrees and lighlty spray a non stick baking sheet and set aside
  2. 2. Combine all ingredients in a large bowl and mix well with your hands
  3. 3. Using a small ice cream scoop measure each meatball evenly you should yield about 18 meatballs or more depending on how large you would like them
  4. 4. Bake for about 20 minutes


Tip: Experiment using various spice combinations for example 

Chili Meatballs:
add 1 teaspoon cumin 1 teaspoon of chili powder

Spicy Meatballs: add 2 teaspoons chopped fresh jalepeno and 1/4 cup finely chopped jicama chili 

Italian Meatballs: add 1 teaspoon fresh lemon zest and 1 tablespoon fresh chopped basil.
