Recipe of the Week: Chicken Pesto Pasta

Ingredients Needed:photo(1)

  • -  1 box Wegmans super pasta penne rigate
  • -  32oz. Boneless chicken breast
  • -  6oz. Wegmans organic spinach
  • -  1/2 cup Classico pesto or homemade
  • -  1 TBSP Parmesan Romano
  • -  Sea salt and fresh ground pepper (to taste)




  1. 1.  Season chicken well with salt and pepper cut into 1" cubes
  2. 2.  Add pasta to seasoned water on boil cool to al Dente about 10 minutes
  3. 3.  Add chicken to preheated deep sauté pan over medium high heat
  4. 4.  After 4 minute add spinach and coverChicken and spinach will have excess water after cooking about 6 minutes.Carefully drain
  5. 5.  Add mixture to cooked pasta
  6. 6.  Add pesto and mix well
  7. 7.  Serve with fresh Parmesan Romano
